- Olive oil : 1/2 cup
- 4 slices lemon divided
- 4 heads garlic cut
- 5 kg Whole turkey
- 5 springs thyme divided
- 5 springs rosemery divided

- 3 teaspoons minced garlic
- 4 ounces (125kg) unsalted butter
- 1/2 Teaspoon dried thyme.
- Preheat oven to 430 F.
- Combine herb butter ingredients in a bowl and mix. Reserve almost half of the herb butter in the refrigerator for later.
- Line a roasting pan with foil. Arrange the 4 halves of garlic cutside downwith 5 springs each of thyme and rosemery, 1 slice of lemon and half of olive oil.
- Pat turkey dry with paper towels. Stuff with the remaining lemon slice, herb and olive oil , a squeeze of lemon from remaining slice.
- Melt butter and rub allover the turkey. season with peeper and salt.
- Place turkey on the top of garlic and herbs. Roast uncovered for 40 minutes for a large turkey over 7 kg.
- Turn turkey over with a pair ogf tongs, a clean towel and baste with pan juice.
- Spread reserve herb butter over the top of your Turkey with a spoon.
- Reduce heat to 320 F/ 165 C for standard oven. Roast it for an hour. Slather turkey with remaining butter And roast for 25 minutes.
- For crispy skin, broil of grill in the last 8 to 10 minutes. Don’t burn it.
- The skin is crispy and the golden brown all over. Tent turkey with foil and give rest before serving.
