How To Make Lloyd’s Carrot Cake:

  • Cover grated carrots in a small saucepan with water.  Bring water to a boil and  Cook for 15 minutes until tender. Cool, then mash.
  • Beat eggs in a large  mixing bowl. Add 2 cups of palm sugar, 2 teaspoons of vanilla, vegetable oil, and buttermilk. Add Salt, baking soda, ground cinnamon, and almond flour . Add the coconut, 2 cups of mashed carrots, almonds, and pineapple.
  • Using parchment paper, line a 13 x 9 x 2.5 inch pan. Fill the pan with  cake batter.
  • Bake at 350°F for 50 min.
  • Before frosting, place the cake on a dish and let it cool fully.

  • Almond Flour: 2 cups
  • Sugar : 2 Cups
  • Super fine Sugar : 2 Cups
  • Buttermilk : 3/4 Cup
  • Butter : 1/4 cup
  • Vanilla Extract : 2 Teaspoon
  • Pineapple Juice : 1 Cup ( canned, Unsweetened)
  • Cream Cheese : 8 Ounces
  • unsalted sunflower seeds : 1 Cup Chopped
  • coconut flakes  : 3/4 cup ( unsweetened )
  • Cinnamon : 2 Teaspoons (ground)
  • Vegetable oil : 3/4 cup
  • Baking soda : 2 teaspoons
  • Fresh Ground sea salt : 1/3 teaspoons
  • Eggs :3 (large )
  • Carrots : 2 Cups ( grated )
